Held on Saturday 22 June and Sunday 23 June, the intimate and interactive masterclasses will showcase how to perfectly pair delicious local beers with artisanal cheeses, beer with chocolate or whisky with cured meats, as well as experience the unique and interesting flavours of rum and learn about the art of making award-winning gin.
The Beer and Spirit Masterclasses will be held at the Jarrah Jacks Bar, a new watering hole at the Truffle Kerfuffle Festival Village at Fonty’s Pool.
“We are really excited to be involved in an event that shines a light on the local Southern Forests produce and the region as a whole,” said Jess Mitchell, Director at Jarrah Jacks based in Pemberton.
“Besides our regular craft beers, we’ll have our seasonal Cherry Ale brew made with local cherries that were hand pitted – that was quite a job! It has interesting fruity limey notes, a cherry aroma and aftertaste, a creamy mouthfeel and just a hint of sweetness, it’s really interesting.”
Mitchell said that just 500 bottles of Cherry Ale were made which will be on sale at the Jarrah Jacks Bar and it will also be available via keg by the glass.
“People usually associate cheese with wine, but we’ll be showing how beautiful cheese, and we’re using the locally made artisan Cambray cheese, complements our hand crafted beers. Also, chocolate and beer is a surprisingly good match and we’re excited about this pairing of malt-driven beer and chocolate by the master Sue Lewis,” Mitchell said.
The Cold Brews and Chocolate Treats presented by Jarrah Jacks is supported by Sue Lewis Chocolatier.
The Jarrah Jacks Bar will feature craft beer, local Southern Forest wines and cocktails created by Long Chim Bar Manager and award-winning bartender Dean Buchanan, who will also lead the Rum and Spice Sensory Session presented by Illegal Tender Rum.
“I’m planning to change things up in the masterclass so rather than being so factual, I’m going to give participants a sensory experience where we deconstruct flavours and spice profiles, build knowledge, taste different rums and create awesome cocktails,” Buchanan said.
“I’ll be sneaking in some fermentation, a few native ingredients and local produce like the Bravo apple which makes a bright red juice rather than a cloudy apple juice.
“Behind the bar, there’ll be lots of WA native ingredients like Davidson plum, muntries, desert limes, cinnamon myrtle, lemon myrtle and I’ll be using a really cool savoury ferment of miso and bush tomato – it’s delicious! And we’ll be serving a truffle-infused old fashioned style drink with wattle seed and a few other surprises.”
The masterclasses feature trophy winning beer and spirits from Jarrah Jacks, Giniversity and Limeburners, all made in WA’s south west and Illegal Tender Rum from Dongara, about 350 kilometres north of Perth.
The Giniversity Botanical and Spritz Garden will include the distillery’s new gin along with Giniversity’s Botanical, London Dry, and Barrel Aged Gins.
Giniversity and Limeburners Distiller Katie Lovis said that participants will be able to construct something unique and exciting to match their individual palate.
“Our Truffle Kerfuffle masterclasses gives participants the chance to discover different botanicals, the styles of gin they enjoy the most, and how to match garnishes and tonics to truly customise their G&T.”
“I’m also excited to showcase our latest Giniversity Gin, Australian Native, which will be first released at our distillery on World Gin Day. We’ve collaborated with the local cultural tour group Koomal Dreaming to sustainably source emu plum for this gin, which is native to the region and we’ve also included native Geraldton wax, lemon myrtle and orris root.”
Lovis said that the masterclass Great Malts meets Great Meats presented by Limeburners will take participants through the craft of Limeburners Single Malt and Tiger Snake Sour Mash Whiskies.
“We’re incredibly proud of the provenance of our whiskies which are produced in Albany, and in our whisky masterclass, participants will learn to identify the delicate aromas and flavours of each expression and how to match these with meats to enhance the flavours. Whisky drinkers will leave with a greater appreciation of whisky and a few skills up their sleeve to take home with them,” Lovis said.
Event-goers can also purchase tickets to Wine Shed Sessions presented by Winning Appliances & Vintec with wine expert Paul Edwards from Full Bottle Wine Education and Events who will lead eight sessions of themed tastings that will explore the best regional wine including texture, science, art and terroir in an informal long table format.

The Winning Appliances & Asko Truffle Kerfuffle, from 21 to 23 June at Fonty’s Pool, Manjimup, Western Australia, is held in the most prolific truffle growing region in the Southern Hemisphere and is a true celebration of Manjimup’s prized black truffles, sought-after by chefs across the globe for their consistent high quality, impossible-to-describe taste and heady, earthy aroma.
